One Bowl Chocolate Cupcakes

I can't think of anything more delicious + comforting than a freshly baked chocolate cupcake! It is for sure one of my comfort foods. This recipe creates a scrumptious, flavorful, and soft chocolate treat that will have you coming back for more! With one bowl preparation this recipe is both quick and easy. Pair with my Quick Chocolate Buttercream, or frosting of your choice!

TIPS + TRICKS

• This recipe will yield either 24 cupcakes or two 8" round layers for a cake.
• All you need is one mixing bowl for this recipe! Less to prep and less to clean is a win-win!
• This recipe calls for white vinegar. This acts as a leavening agent and creates a more tender cake.
• Stir batter until just combined; don’t over mix.
• When it is time to take the cakes out, test to ensure they are fully cooked by inserting a wooden toothpick in the middle. If it comes out clean, the cake is ready.
• Leftovers can be stored at room temperature covered in an airtight container for 3-4 days.
• To save time in the future, pre-measure a few batches of the dry ingredients and seal them in airtight bags so you'll have easy "cake mix" prepared for next time.

INGREDIENTS

INSTRUCTIONS

1. Preheat oven to 350°F.
2. Line cupcake trays with paper liners, or spray two 8" round pans with nonstick cooking spray.
3. In a large mixing bowl, combine the flour, cocoa, granulated sugar, baking powder, baking soda, and salt. Whisk together.
4. To the same bowl, add the eggs, sour cream, oil, vanilla, vinegar, and hot water to the dry ingredients. Mix with a wooden spoon until the batter is smooth.
5. Pour the batter into the pans.
6. For cupcakes, bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean. For two 8"round cakes, bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
7. Remove pans from oven and let cool on a wire rack.
8. Frost and serve!
